Just add Olive Oil

One of the students who is also in the London program with me is Greek. Her parents came over to visit so her mom and dad taught us how to make a traditional Greek dinner. Her mom, Eleni is a chef and she teaches her own cooking classes all around the world.

Menu
1. Pita bread with home-made Tzatziki sauce
2. Greek salad (tomatoes, red and green bell peppers, onion, cucumbers and feta cheese)
3. Feta cheese pies
4. Spinach risotto
5. Rosemary potatoes
6. Roasted chicken and lamb
7. Baklava

My favorite was the Spinach risotto. It is so easy and only takes about 30 minutes to cook.


Spinach Risotto Recipe
Ingredients
2 cups of white rice
1 cup of white wine
2 onions
2 cups of boiling water
200g of spinaches
2 garlic cloves
2 tablespoons of feta cheese
olive oil
salt, pepper
Instructions
1. Sauté the onions and garlic until a light, golden brown
2. Add the risotto rice and stir to make sure the onions and garlic are mixed in
3. Add the cup of white wine, stir, place a lid of the pan and then let sit at low fire for about 5 minutes (white wine is optional)
4. Add the spinaches on top of the rice and mix it all together
5. Pour the 2 cups of boiling water and let sit for 15 minutes at low fire.

Season with salt and pepper. Spread the cheese on top before serving.
